Remember when I mentioned that the Hubs hates coconut? He still does. Yet that didn’t stop me from making these awesome homemade vegan granola bars. WITH coconut. More for me!! Ha….

I made so many changes that I’m going to just credit myself on this one. Double Ha!! Once I took a bite a very important question crossed my mind. This question was; why the hell haven’t I made these before!??

Give them a try. Easy, fast, super duper healthy and you most likely have most of these things in your pantry already.

vegan granola bars

Homemade Vegan and Gluten Free Granola Bars
makes 12 large bars

2 cups gluten free rolled oats
3/4 cup almond flour or hemp hearts
1/3 cup sunflower seeds
1/3 cup pumpkin seeds
1 cup whole almonds

1 cup shredded coconut
1/2 cup raisins
1/2 cup dried cherries or cranberries or a mix of the two

1/2 cup coconut sugar
1/ 4 cup maple syrup
6 tbsp coconut oil or vegan butter
2 tsp vanilla extract and a pinch of salt

1/3 cup vegan chocolate chips (totally optional by why not???)

Line a 9×13 baking sheet with parchment paper or a silicone baking mat. Set aside. 

Preheat the oven to 400 degrees F. In a large bowl combine oats, flour or hemp, seeds, and nuts. Spread onto a larger baking sheet and toast for 8 minutes, stirring ever couple minutes. Stir in shredded coconut and continue to toast for another 2-3 minutes. Remove from oven, stir in dried fruit. Return to bowl and set aside.

In a saucepan combines coconut sugar, maple syrup, coconut oil or vegan butter, salt, and vanilla. Bring to a simmer, stirring constantly. Once sugar has melted pour hot liquids over the oats and mix thoroughly to combine. Let cool slightly and stir in the chocolate chips.

Transfer granola onto prepared 9×13 baking sheet, spread evenly, and press down hard (running your hands under very cold water for a minute helps with this step and is also a great trick for when you’re making rice cereal squares!). Let granola cool for 1-2 hours. Flip baking sheet over to release and cut into bars.

Store in an airtight container at room temperature or in the fridge.
